Black Figs by the Case

Black Figs by the Case - I love fig season :-)

Nachos

Nachos - red peppers, onions, corn melted into grated old cheddar on top of blue corn chips on top of a bed of refried beans (mashed pinto beans, olive oil, fresh garlic, onion powder, and chili powder)

It's very good just like this however you can have any or all of guacamole, salsa, or sour cream on the side.

Vegan Stir Fry

Vegan Stir Fry - Sauteed Swiss chard, onions, red peppers, mushrooms, and firm tofu with a sauce of garlic, ginger, soy sauce and corn starch.

Christmas Day Dinner

Roast lamb, garlic mashed potatoes, baked salmon, roasted butternut squash, and sauteed green beans.

Fried Leftovers

I found this in the fridge... white potatoes, mushrooms, and onions and I finished it with some chunks of old cheddar. I had it with some nice bread :-)

Fettuccine with Spinach and Tomato Sauce

A premium tomato pasta sauce fortified with TVP and fresh spinach served on a bed of fettuccine.

Lobster Fettuccine Alfredo

Baked lobster with Alfredo sauce (butter, milk, flour, salt, pepper, and Parmesan) served with steamed broccoli on fettuccine.

The sauce was a little thick and I was hesitant to fix it after I put the lobster in :-(

Pulled Pork on a Bun

Pulled pork made in a slow-cooker served on a ciabatta (boneless shoulder spiced with garlic and chili powder, covered with onions, and finished with bbq sauce), red cabbage slaw made with olive oil, cider vinegar, and salt, and pan roasted sweet potatoes with olive oil a bit of chili powder.

Another Breakfast Fry

Another Breakfast Fry - Pan fried mushrooms, sweet onions, yellow peppers, and brown rice in olive oil... spiced with some parsley, salt, and pepper and finished with some eggs.

Tofu Salad

Tofu salad with cucumbers, sweet onions, cherry tomatoes, sweet red peppers, cilantro, olive oil, and wine vinegar. Possibly serve with bread or crackers.

Red Snapper with Potatoes and Baby Bok Choy

Pan fried breaded red snapper (flour, egg, breadcrumbs) with pan fried red potatoes (olive oil, butter, parsley, salt, and pepper) and steamed baby bok choy.

Thanksgiving Dinner

Slow roasted turkey, carrots, red cabbage, and butternut squash. Cranberry sauce made with fresh cranberries, sugar, and lemon juice. Mashed potatoes made with russet potatoes, garlic, butter, salt, and milk. Turkey gravy made with the drippings, a bit of cornstarch, salt, and pepper.

Baked Salmon and Roasted Vegetables

Baked salmon with lemon and parsley. Roasted vegetables (sweet peppers, sweet onions, mushrooms, zucchini, and broccoli) made with olive oil, salt, and pepper. Mashed russet potatoes made with fresh garlic, parsley, butter, milk, and salt.

Baked Spanish Mackerel


Baked then deboned Spanish mackerel served with peas made with sauteed sweet onions and steamed rice.

Barbeque


Barbeque -Pulled pork made with a boneless pork loin, onions, garlic powder, onion powder, chili powder, and salt done in the slow cooker and finished with BBQ sauce. Sauteed collard greens with red onions and cajun spice. Coleslaw made with cabbage, parsley, cider vinegar, olive oil, salt and sugar. Cornbread (cornmeal, flour, baking powder, sugar, salt, eggs, honey, butter milk, butter)

Steak and Rosti


A pan fried minute steak. Rosti made with russet potatoes, onions, carrots, salt, and butter. Sauteed carrots and corn in butter.

Aloo Gobi and Saag Tofu on Rice

Cauliflower and potatoes made with sweet onions, fresh ginger, turmeric, cumin seeds, cumin, coriander, cinnamon, and chili powder. Fresh spinach and tofu made with sweet onions ground tomatoes, cumin, coriander, and chili powder. All served with some brown rice.

Fried Smelts

Fresh smelts (dusted with flour, chili powder, onion powder, and salt) and fried in a bit of canola, blanched green beans, and steamed brown rice, served with a big chunk of lemon.

I buy these whenever they show up at the grocer. My kids have loved these ever since they were very small. And yes... we eat the bones and tail too (these ones had their tails removed when we bought them).

Sauteed beef and broccoli with onions, garlic, soy sauce and a bit of corn starch on rice noodles.
