Black Figs by the Case

Black Figs by the Case - I love fig season :-)

Nachos

Nachos - red peppers, onions, corn melted into grated old cheddar on top of blue corn chips on top of a bed of refried beans (mashed pinto beans, olive oil, fresh garlic, onion powder, and chili powder)

It's very good just like this however you can have any or all of guacamole, salsa, or sour cream on the side.

Cinnamon Buns

Making them yourself they're a fraction of the price and and they're OMG good. This recipe is for 12 rolls in a 9x13 pan

  • 4 cups flour
  • 1 teaspoon salt
  • 1/2 cup white sugar
  • 1 package quick rise yeast
  • 1 cup milk
  • 1/3 cup butter
  • 2 eggs
  • 1/2 cup sugar
  • 4 tsp cinnamon
  • 1/3 cup softened butter

    1. mix 1 cup of the flour, yeast, salt, sugar
    2. warm the milk and butter to 130F then add to dry and mix
    3. mix in the eggs
    4. add the remaining flour and fold till smooth
    5. let sit for 10 minutes
    6. knead for 5 minutes then roll out a big rectangle ~18x18
    7. spread dough with butter, sugar, and cinnamon
    8. roll up dough and cut into 12
    9. grease the pan and fill with the rolls
    10. cover and let rise until nearly doubled ~45 minutes
    11. bake at 400 till golden... ~ 20 minutes
    12. make the frosting... beat the cream cheese, butter, sugar, vanilla and fire at will
    • 1/2 cup cream cheese
    • 1/4 cup butter
    • 1/2 cup powdered sugar
    • 1/2 tsp vanilla

    Banana Bread

    • 4 large very ripe bananas
    • 2 large eggs
    • 1 tsp vanilla
    • 1/4 c melted butter
    • 1/2 tsp nutmeg
    • 1/3 cup sugar
    • 1/3 cup yoghurt
    • 2 cups whole wheat flour
    • 1.5 tsp baking soda
    1. mash bananas with extreme prejudice
    2. beat in yogurt, eggs, sugar, vanilla, and nutmeg
    3. gently mix into flour and baking soda
    4. a buttered Bundt is best
    5. bake at 350F
    6. ~45 minutes

    An Avocado

    This is how my mom served it to me.... with store bought Catalina dressing. It just works like nothing else!

    The Peanut Butter and Banana Sandwich

    A classic!

    Latkes and Apple Sauce

    Works well as an appetizer, a desert, or a snack.

    Latkes made with russet potatoes, carrots, sweet onion, and whole wheat flour. Fried in a little bit of canola oil. Served with apple sauce.

    It's Fig Season!

    A perfect fruit :-)

    Mango rice pudding

    Mango rice pudding made with short grain brown rice, coconut water, coconut milk, soy milk, sugar, and dried mango.

    Peanut Butter Cookies

    2 cups whole wheat flour
    1 teaspoon baking soda
    1 cup brown sugar
    1 1/2 cup peanut butter
    1/2 cup unsweetened apple sauce
    1/4 cup canola oil
    1 tsp. vanilla
    Mix the dry. Mix in the wet. Put rounded tablespoons on a sheet and press with a fork for the classic PB cookie.Bake at 350 for about 12 minutes.

    Definitely kid approved

    Oatmeal Cookies

    Kid approved vegan cookies!

    1 cup whole wheat flour
    1/2 cup ground flax

    1/2 tsp baking soda
    1 cup sugar
    1 tsp cinnamon
    1/2 tsp nutmeg
    1 cup raisins
    1/2 cup soy milk
    1/2 cup canola oil
    1 tsp vanilla
    3 cups rolled oats

    Mix the dry ingredients except for the oats. Mix in the wet. Mix in the oats. Bake 14 minutes in a 350F oven. Makes about 2 sheets of 12 cookies.
