There are lots of recipes around but not many complete meal ideas. I try to keep it simple, use what's on hand, cook from scratch, and buy organic. I try to go vegan as often as possible.

Garlic Eggplant
Sauteed Chinese eggplant with sweet onions, mushrooms, extra firm
tofu, garlic, and tamari sauce on a bed of long grain brown rice.
