There are lots of recipes around but not many complete meal ideas. I try to keep it simple, use what's on hand, cook from scratch, and buy organic. I try to go vegan as often as possible.

Lemon Zucchini Pasta
Sauteed zucchini and sweet red peppers with tofu, basil, garlic, and fresh lemon juice on whole wheat spaghettini. Topped with some nutritional yeast.
