There are lots of recipes around but not many complete meal ideas. I try to keep it simple, use what's on hand, cook from scratch, and buy organic. I try to go vegan as often as possible.

Channa Masala and Sauteed Okra
My wife will fight me for the leftovers...
Channa Masala with chickpeas, sweet onion, tomatoes, ginger, garlic, cumin seeds, turmeric, coriander, cinnamon, and chili powder. Sauteed Okra with lemon juice. All on a bed of quinoa.
