There are lots of recipes around but not many complete meal ideas. I try to keep it simple, use what's on hand, cook from scratch, and buy organic. I try to go vegan as often as possible.

Pasta Primavera
Even the kids love it (minus the nooch).
Tomato sauce with copious veggies de jour (this time... carrots, sweet onions, button mushrooms, and garlic) and soy protein on whole wheat bow-tie pasta topped nutritional yeast.
