There are lots of recipes around but not many complete meal ideas. I try to keep it simple, use what's on hand, cook from scratch, and buy organic. I try to go vegan as often as possible.

Lemon Zucchini Pasta
Sauteed zucchini and sweet peppers with black beans, basil, garlic, and lemon juice on whole wheat rotini.
I prefer it with fried tofu or chickpeas but black beans were my legume du jour.
