There are lots of recipes around but not many complete meal ideas. I try to keep it simple, use what's on hand, cook from scratch, and buy organic. I try to go vegan as often as possible.

Frijoles Refritos
A perfect dip or spread.
Saute onions, mushrooms, garlic, chili powder, and cumin in olive oil, Add cooked black beans, salt, and water. Let simmer, then mash.
You can substitute any bean for the black beans :-)
