There are lots of recipes around but not many complete meal ideas. I try to keep it simple, use what's on hand, cook from scratch, and buy organic. I try to go vegan as often as possible.

Veggie Udon Soup
Udon Soup made with vegetable stock, oyster and shiitake mushrooms, snow peas, carrots, green onions, ginger, firm tofu, soy sauce, mirin, and udon noodles. The broth is quite amazing.
