Holiday Vegan Dinner

A holiday dinner with rice and peas (black eyed peas, a variety of rices, sweet red peppers, leeks, and garlic), roasted carrots with fresh ginger, bread stuffing (whole wheat bread, celery, dried cranberries, sweet onions, mushrooms, garlic, toasted pine nuts, whole wheat flour, and vegetable stock), mushroom gravy (portobello mushrooms, sweet onions, fresh garlic, whole wheat flour, and vegetable stock), and a spinach salad (baby spinach, tiny tomatoes, blueberries, candied pecans, and a balsamic vinaigrette (balsamic vinegar, olive oil, Dijon mustard, basil, salt, and fresh garlic)).

Spaghettini and Garlic Toast

Spaghettini and tomato sauce made with onions, garlic, soy protein, and loads of button mushrooms served with fresh garlic garlic toast :-P

Vegan Holiday Dinner

A holiday dinner with bread stuffing (whole wheat bread, celery, dried cranberries, sweet onions, mushrooms, garlic, toasted pine nuts, whole wheat flour, and vegetable stock), roasted spaghetti squash with nutmeg, roasted asparagus with garlic, succotash (sweet corn, garbanzo beans, onions, garlic, and spinach), and a spring salad (assorted baby greens, strawberries, tiny tomatoes, toasted candied pecans, and a balsamic vinaigrette).

Tea and Toast

A beautiful breakfast of toast with red current jam and white tea.

Vegan Holiday Dinner

A pilaf made with variety of rices, sweet onions, crimini mushrooms, fresh cranberries, curly parsley, and olive oil. Roasted butternut squash with fresh ginger. Sauteed cabbage. A cassoulet of barley, red lentils, ruby Swiss chard, sweet onions, and garlic.

A Piquant Pita

A whole wheat pita stuffed with romaine lettuce, mashed chick peas, spring onions, sweet peppers, avocados, and hot sauce.

Veggie Casserole

A layered casserole with cabbage, tomato sauce, soy protein, veggie stock, sweet peppers, mushrooms, garlic, barley, more cabbage, and more tomato sauce.

Very good the first day... very, very good the second.

Aloo Gobi with Mung Beans

Aloo gobi with cauliflower, red potatoes, sweet onions, tomatoes, ginger, garlic, cumin seeds, turmeric, coriander, chili powder, garam masala, and mung beans served with long grain brown rice.

Curried Lima Beans and Zucchini

Curried lima beans made with sweet onions, tomatoes, cumin seeds, cumin, turmeric, coriander, cinnamon, and chili powder. Sauteed zucchini with scallions and garlic. Long grain brown rice.

A Wrap and Veggies

A whole wheat pita housing peanut butter, hot sauce, luncheon tofu, roasted sweet peppers, and romaine lettuce. Served with some cauliflower and sweet orange peppers.

I was going for a Thai twist with the peanut butter and hot sauce. It was quite good despite what my kids said.

Oatmeal Cookies

Kid approved vegan cookies!

1 cup whole wheat flour
1/2 cup ground flax

1/2 tsp baking soda
1 cup sugar
1 tsp cinnamon
1/2 tsp nutmeg
1 cup raisins
1/2 cup soy milk
1/2 cup canola oil
1 tsp vanilla
3 cups rolled oats

Mix the dry ingredients except for the oats. Mix in the wet. Mix in the oats. Bake 14 minutes in a 350F oven. Makes about 2 sheets of 12 cookies.

Vegetable Soup

I needed a light meal tonight.

Cabbage, yams, carrots, green onions, curly parsley, and vegetable broth.

Tabbouleh for Vegans

Tabbouleh fortified with lentils and flax seed oil. This dish is a complete meal and a perfect lunch-to-go I believe :-)

Cucumbers, sweet onions, tomatoes, bulgur, red lentils, mint, curly parsley, olive oil, flax seed oil, lemon juice, and salt.

Both kids told me today that it was the best tabbouleh they ever had. I got a 10 and a 9.5!

A Burger and Salad

A five star burger and salad!

A veggie burger on a whole grain bun with tomatoes, pickles, lettuce, and garlic sauce. Baby romaine with tomatoes, green onions, avocado, olive oil, balsamic vinegar, Dijon mustard, basil, salt, and pepper.

PB&J and Coleslaw

The infamous PB&J made with crunchy peanut butter and beautiful berry jam on whole wheat.

Coleslaw made with cabbage, carrots, parsley, olive oil, cider vinegar, salt, and sugar.

I ate the coleslaw first :-)

Seven Grain Cereal and Raspberries

Seven Grain cereal made with extra flax and golden raisins served with raspberries and soy milk.

Spaghettini with Spinach Tomato Sauce

A simple tomato sauce exploding with spinach and mushrooms, and fortified with yummy soy protein. Served on whole wheat spaghettini.

Chick Peas Peas Pita

Chick peas two ways!

A whole wheat pita with hummus, falafel, lettuce, tomatoes, and garlic sauce.

Vegan Garlic Sauce

This stuff is powerful. The garlic comes through like crazy!

Blend well 1 cup silken tofu, 2 or more cloves garlic, 1 tbsp olive oil, and salt to taste.

I use this as a tzatziki substitute.

Veggie Stir Fry on Rice

A veggie stir fry with broccoli, sweet yellow peppers, button mushrooms, zucchini, firm tofu, garlic, ginger, and tamari sauce served on short grain brown rice.

Hummus for Vegans

The flax makes this Hummus for Vegans.

4 cloves garlic, 2/3 cup toasted sesame seeds, 2/3 cup ground flax, 1/3 cup olive oil, 1/3 cup lemon juice, 1 tsp salt, 1 cup water, 4 cups cooked chickpeas.

Food process everything but 3 cups of the chickpeas until the seeds disappear. Add the remaining chickpeas and whiz till happy. Adjust water if needed for consistency.

Frijoles Refritos Wrap and Veggies

Easily one of the best sandwiches I've ever had! Yes... really.

Frijoles refritos, avocado, lettuce, and hot sauce in a whole wheat wrap. A veggie bowl with cucumber, carrots, and snow peas.

Three Sisters Pita

Wrap some butternut squash, corn, and frijoles refritos in a whole wheat pita.

Add some hot sauce and you're in pita heaven.

Frijoles Refritos

A perfect dip or spread.

Saute onions, mushrooms, garlic, chili powder, and cumin in olive oil, Add cooked black beans, salt, and water. Let simmer, then mash.

You can substitute any bean for the black beans :-)

Lemon Zucchini Pasta

Sauteed zucchini and sweet peppers with black beans, basil, garlic, and lemon juice on whole wheat rotini.

I prefer it with fried tofu or chickpeas but black beans were my legume du jour.

Luncheon Tofu

Some people eat luncheon meat. Some eat simulated vegan luncheon meat. I just make my own Luncheon Tofu for sandwiches, wraps, and pitas. Saute slices of tofu with a few drops of olive oil and some spices. I used Cajun spice this time.

Vegan Thanksgiving Dinner

My first vegan Thanksgiving dinner. Can't wait to have it again.

Succotash with lima beans, corn, sweet onions, and collard greens. Baked spaghetti squash. Sauteed brown rice with sweet onions, garlic, and mushrooms. Fresh cranberry sauce with lemon juice, and orange zest.

Channa Masala and Sauteed Okra

My wife will fight me for the leftovers...

Channa Masala with chickpeas, sweet onion, tomatoes, ginger, garlic, cumin seeds, turmeric, coriander, cinnamon, and chili powder. Sauteed Okra with lemon juice. All on a bed of quinoa.
